Don't Try This At Home...

...or do, because now you can!!!
That's right, taxpayers. Following my installment of The Fellowship of the Dinner Party on Sunday March 28, and the numerous requests for the recipes I used, here they are in all their blogging splendour:

Mexican Chicken Lasagne

- Canola or olive oil spray
- 400g lean, minced chicken
- 1 red capsicum, finely chopped
- 1 tsp finely chopped red chilli
- 440g can red kidney beans, rinsed and drained
- 575g jar tomato-based pasta sauce
- 400g can crushed tomatoes
- 375g low-fat ricotta cheese
- 1/2 cup grated, reduced fat cheese

Preheat oven to 180 degree C. Spray non-stick pan with oil and heat. Add mince and cook over high heat until browned completely, using a wooden spoon to break up lumps.

Add capsicum, chilli, beans, pasta sauce and tomatoes and stir to combine. Spray base of large lasagne dish with oil. Cut pasta to size and place a layer on the bottom of the dish, then alternate sauce and pasta layers, finishing with a pasta layer. (You should fit 5-6 layers into the dish).

Spread the ricotta over the pasta and sprinkle with grated cheese. Bake for 30 minutes or until pasta starts to brown around the edges. Stand for about five minutes after cooking, and then serve with a green salad and some crusty bread.

Chocolate Mousse

- 200g dark chocolate, chopped
- 4 eggs
- 3/4 cup cream

Melt chopped dark chocolate in a bowl over hot water. Remove from heat and stir until smooth. Allow to cool for 5 minutes. Separate 4 eggs. Beat the yolks, one at a time, into the warm chocolate. Add 3/4 cup cream and mix well until combined. Whisk the egg whites in a clean, dry bowl until they form soft peaks. Fold a little of the whites into the mousse and then quickly and lightly fold in the remainder until there are no streaks or pockets of white. Pour the mixture into six small ramekins or bowls. Cover with plastic wrap and chill for a few hours. (Chocolate mousse is a great dessert to make ahead; it can be kept covered in the fridge for 2-3 days). Serves 6.

I enjoyed everyone's company as always, I can't wait for the next one... So who's going to toss their hat into the ring for the April edition of the Fellowship Dinner party? EH? Someone had BETTER!!!!
